Puerto Rico native Jose Mendin is a five-time James Beard Award-nominated chef, who has brought the 305 food scene staples such as Pubbelly Noodle Bar, Pubbelly Sushi, PB Burger, and his newest restaurant, Habitat. Mendin chatted with PAMM before the big night about his influences and what he’s cooking up for our Corporate Cocktail.

What defines Miami cuisine?
Miami’s food scene is defined by the city’s cultural diversity. We offer a wide array of cuisines that blend together seamlessly–from Puerto Rican to European, you can find it all here.
How do your roots and background influence your food?
I try to always blend flavors from my native country, Puerto Rico, with various cooking styles and techniques. For me, it’s important to showcase my culinary experiences in every dish.

How did you create the menu for the evening?
I wanted to give guests a taste of what I am doing at Habitat while still mixing things up! The menu will feature some fresh amberjack, croquetas, and bacon-wrapped dates.
